In the vines
Following devastating vandalism, this plot was replanted in 2015 with a Massal Selection of 161 49 C Bio from Lilian Berillon.
Located in the far north of the Cazetiers appellation, against the terroirs of «Combes aux Moines» and «Champeaux», it is planted on predominantly limestone soil with a shallow depth.
Viticulture
Taille Guyot Poussard and cordon de Royat, mechanical plowing and 100% organic fertilizers.
We use organic products, and we maximize manual labor : disbudding, trimming, leaf stripping, green harvesting.
Harvest
Manual harvest in 20 kg boxes with a firstsorting at the vineyard.
In the glass
Lots of finesse in this Gevrey-Chambertin ler Cru, beautiful floral expression in the aromas.
The 75% of new barrels are very well integrated.
Vinification
2nd sorting at Domaine.
60% destemmed and 40% whole cluster.
Natural yeasts, moderate punching down and pumping over.
