In the vines
Grapes are from 3 old vineyard located at the south of Gevrey : two plots in the parcel called «En Joisse», one above the Route de Beaune and the other in «Murots».
The third plot is planted on soil composed of a large formation of alluvium, very draining.
The yields are very moderate and allow a contribution of whole clusters of up to 40%.
Viticulture
Taille Guyot Poussard and cordon de Royat, mechanical plowing and 100% organic fertilizers.
We use organic products, and we maximize manual labor : disbudding, trimming, leaf stripping, green harvesting.
Harvest
Manual harvest in 20 kg boxes with a firstsorting at the vineyard.
In the glass
Black fruits and velvet tannins, this wine shows the classical structured Gevrey-Chambertin.
Complexity and finesse, always very qualitative due to its low yields.
Vinification
2nd sorting at Domaine.
70% destemmed and 30% whole cluster.
Natural yeasts, moderate punching down and pumping over.
