  • Cold static clarification for 48 hours after pressing.  Slow fermentation in stainless steel tanks between 15 and 18°C for 1 month. 
  • Dry/off dry, it develops a characteristically opulent flavour of yellow fruits with smoky hints. Rich and supple with a long finish.

  • It is excellent with white meat, ham, roasts, offal, and smoked fish.
