  • Chenin Blanc 100%
  • Terroir: Clay and flint and clay and limestone soils.
  • Wine-making: Pneumatic pressing. Temperature-controlled
    alcoholic fermentation followed by 6-month ageing on fine
    lees in stainless steel vats until bottling.
  • Tasting: A pale yellow wine with silver tinges. The nose
    suggests fresh fruit aromas – apple, pear, quince – and white
    flower and acacia notes. On the palate the wine is crisp,
    fruity and structured by a refreshing and savory acidity.
  • Pairing: this wine can be served as an aperitif. It pairs
    perfectly with scallops and cream and with exotic and Asian
    dishes such as bo bun, Indian curry… It also pairs well with
    fsweet and savoury food, like pan-fried foie gras served with
    grapes or figs, or white pudding and apple compote. Goat
    cheese – such as Valençay – or an apple pie will also make an elegant pairing.
  • Serve between 9 and 11°C and will age well for 10 to 15 years
