  • Wine-making: Pneumatic pressing. Cold settling in stainless
    steel vats, no enzyme use. Temperature-controlled alcoholic
    fermentation with indigenous yeasts: in stainless steel vats.
    6-month ageing before bottling
  • Tasting: A pale yellow wine with silver tinges. The nose
    suggests aromas of white fruit – pear, quince, fresh apple –
    and exotic fruit. After a lively and mineral attack, the wine
    develops delicate white fruit flavours on the palate. The
    finish is savory, with flavours of English candy.
  • Pairing: Beautiful as an aperitif but also a gastronomic wine that will pair deliciously with white fish (such as cod), lobster, oysters, risotto or goatcheese.
  • Serve at 10°C and will age beautifully 10 to 15 years
